Chef Diego Muñoz sits down for an exclusive interview with DSCENE Magazine to talk about his culinary journey, Peruvian cuisine, and Popular’s extraordinary brunch experience.
Can you tell us about your journey from growing up in Lima to becoming a renowned chef with international culinary experiences? – Growing up in Lima was filled with excitement and joy. From riding bicycles to skateboarding and bodyboarding, our time was mostly spent on the vibrant streets, crafting unforgettable memories.
After high school, university became the sole path to follow. In the early 90s, gastronomy was considered an unconventional career choice. However, after three years of underperforming as a university student, I began searching for an escape. Fortunately, a friend of mine was enrolled in a cooking school in Paris, and I eagerly seized the opportunity. Transitioning from being the least successful student at university to excelling at cooking school, I discovered my true calling.
Since then, my journey has been focused on seeking out places with a strong gastronomy culture to work and develop my skills. In 2008, I took on the role of directing my first restaurant in Sydney, and since then, I have been leading kitchens, managing teams, creating innovative concepts, and maintaining a steadfast commitment to continuous learning.
How has your multicultural background influenced your culinary approach? – That is fascinating because one of the most intriguing aspects of my upbringing was the opportunity to dine at various friends’ homes. These friends came from diverse cultural backgrounds, such as Chinese, Japanese, German, and Italian, yet the meals always had a Peruvian core. It was during those moments that I realized Peru, with its rich heritage and abundant array of ingredients, blends different cultural influences into its gastronomy.
In my own culinary style, I embrace these influences and combine them with Peruvian produce, language, and heritage. This amalgamation forms the foundation of my gastronomy, resulting in a unique and distinctive culinary expression.
What makes Peruvian cuisine stand out in the global culinary landscape? – It is a cuisine developed with a very strong cultural heritage, featuring an astonishing variety and quality of produce spanning the different altitudes along the coast, Andes, and Amazon regions. In addition, the influence of various cultures that have settled here has contributed to our repertoire, all while maintaining a deep respect for tradition. We take great pride in having passionate ambassadors around the world who enthusiastically share our culinary traditions.
How do you incorporate traditional Peruvian flavors and ingredients into your innovative and contemporary culinary creations? – Everything starts with traditional inspiration, be it a specific ingredient, dish, or celebration, and from there, I seek out local resources to complete the concept.

What role does fresh and locally sourced produce play in the creation of Popular’s dishes? – We change our menu frequently, always driven by local seasonal ingredients. We combine these ideas with the Peruvian produce available locally, sparking a dynamic interaction. We carefully modulate the intensity of flavors to suit local palates, constantly adjusting our offerings to maintain authenticity while keeping things interesting.
Could you tell us more about the inspiration behind the brunch menu at Popular? – Brunch is a major celebration in the United States that I wholeheartedly embrace and enjoy. We have drawn inspiration from the local tradition, incorporating a selection of our own regional ingredients. To complement the experience, we offer an array of exquisite cocktails from our Pisco Bar.
How does it complement the outdoor dining experience in Bowery Garden? – During spring and summer, it is a magical place to be as the trees are in full bloom, creating enchanting shadows. Whether in the afternoon or at night, it is a delightful setting to savor our cuisine.
What sets Popular’s brunch menu apart from other brunch offerings in the area, and what can diners expect in terms of flavors and culinary creativity? – We often put our own spin on classics by incorporating our unique flavor profiles, adding a touch of extra acidity or spiciness, and incorporating Peruvian twists.
How do you ensure a harmonious balance between classic favorites and innovative culinary creations? – Flavor, texture, and temperature have always been paramount. It is crucial to pay attention to every step of the dish. From there, we explore a variety of techniques, sometimes classic and sometimes innovative, but all with the ultimate goal of creating a delightful plate and a memorable culinary experience.
Are there any particular brunch dishes or combinations that you would recommend as must-try options for first-time visitors to Popular? – I would recommend ordering different dishes to share at the center of the table.
